I happen to have a friend who lived in Ethiopia for 7 years, and she was kind enough to come over and talk to the kids about what that was like.
Her name is Maggie, and I don't think she was trying for anonymity, I just forgot to get a picture of her while she was talking to the kids! That's her in the blue.
She told the kids about all the animals and birds she had seen, and she brought clothing and baskets and things to show us.
We forgot the injeera, but she told us it was very common to have popcorn at the twice daily coffee ceremony. So our snack was popcorn with a little sugar. She said that the Ethiopians (in her village) like sugar on their popcorn and butter and salt in their coffee!
For our art/active activity, we carved soap: a little like the carved churches of Lalibela.
